Heyyyyyy there! How goes it?
Sorry for being MIA this weekend, we have been out and about the majority of the weekend. We have been hanging out with Mike’s family, seeing friends, running errands, hitting up the gym, and visiting three grocery stores. Yes, three. ;) Muahaha. Whole Foods on Friday, Rainbow Foods (a local chain) yesterday and Lund’s today. I just had to share; I know some of you have a love for the grocery store just as much as I do!
Anyways, on to today. Super Bowl Sunday.
Although I may be somewhat bitter that my beloved Minnesota Vikings are not playing in the big game today (I still think they should be!), the Super Bowl is still a great American tradition. Don’t you think? Good food, beer, friends, sports and great commercials. Perfect Sunday in my eyes.
To gear up for the festivities, I hit the gym and partook in a 45 minute interval session on the elliptical, followed by some ab work. For a workout recovery ‘meal’, Mike and I split an enormous smoothie I put together.
- Crushed ice
- 1/2 cup of mixed berries
- 1 banana
- 1 carton strawberry yogurt
- 1 heaping scoop of protein powder


And I also nibbled on an unphotographed Chickpea Blondie (which I think Mike secretly likes…) while mixing up these beauties…

Chocolate Fudge cupcakes! The recipe called for 24 cupcakes. I made 16 larger cupcakes. 24 cupcakes makes them way too small in my world.
Okay, I totally licked the bowl, spoons and spatula I used too. :oops: I couldn’t help myself. The cupcakes are currently in the oven and creating the most amazing aroma in the apartment. Ahhh.
Oh, and Mike got to pick out the frosting. Guess what he chose?

Totally fitting for his personality. I love it.
We are having some friends over for the Super Bowl tonight. On the menu: chips, homemade pizza and cupcakes. Our friends are also bringing over goodies to share.

And last but not least, I was going through some photos this morning, and found one that I have got to share.

Yes, Petrie vs. the bulldog. Mike totally died and went to heaven when we brought Petrie to the dog park and in the ‘large dog’ park, waddling around was a bulldog. Petrie and the bulldog loved each other too. Bummer Petrie couldn’t play in the big dog park. She totally would hold her own ground.

I love funfetti icing!! It reminds me of being a little kid and eating it out of the tub with graham crackers. Those cupcakes look killer…
