I just got back from happy hour with two of my best friends, also my old roommates. Nothing better than time spent with your best friends!
Not much to report. I enjoyed a Blue Moon and we shared some appetizers. I had a buffalo chicken wonton, some nachos and sweet potato fries. But I had just enough so that I was content. Those three apps pack a lot of unhealthy ingredients that can add up if you aren’t careful. But that is why you can enjoy, just in moderation!
Since I don’t have photos to share with you, I thought I would share the photos of my banana bread loaf that I forgot to upload this morning!

Mike commented today that there was something about this particular loaf that made it better than any other loaf I had made. That maybe it was a bit doughy? I started laughing, because that was exactly it. I undercooked it by about 5 minutes, leaving the center of the bread just very, very slightly dough like. Once the bread cools, it leaves the most delicious and moist banana bread you’ll ever eat. I am a true dough/batter eater at heart.
Lara over at Thinspired asked if I would post the recipe for my banana bread. So here it is! It is my mom’s tried and true recipe, I hope you enjoy:
Mom’s Banana Bread
- 1 c. sugar
- 1/2 c. margarine or butter
- 2 eggs, beaten
- 1 tsp. soda
- 2 c. flour
- 3 Tbsp. sour milk (or 2 Tbsp. milk, 1 Tbsp. lemon juice)
- 3 mashed bananas
Cream sugar and butter. Add eggs, beat well. Sift flour and soda together. Add alternately with sour milk. Add mashed bananas, mix well. Pour into greased loaf pan. Bake at 350 degrees for 1 hour. Cool for a few minutes before you take out of loaf pan to cool longer.
