Songs Like This

I love Tuesday nights.  I have a tradition of reviewing all the new music that is released each week on iTunes.  Ahh, life’s simple pleasures.

Nothing is really catching my eye this week, but I will continue to scan my options after I post :) .

However, after watching Carrie Underwood’s special last night, I can’t get her new song ‘Songs Like This’ out of my head.  Or, ‘Mama’s Song’, which always brings tears to my eyes.  I’m such a sap in that way.

Anyway, the snow storm has definitely arrived in Minneapolis!  I walked out the doors of my work building and was immediately greeted with a shrewd gust of wind, filled with sharp snow crystals.  Lovely, just lovely.  I seriously don’t know how many more Minnesota winters I can handle.  I am ready for the south!

However, one thing I do truly love, is a calm snow.  The kind with the big flakes the slowly fall.  There are few things that are more breathtaking than that scene.  If it happens this winter, which I’m positive it will, I will try to capture it on photo.

All I wanted to do when I got home was curl up on the couch in my sweats.  So dinner had two requirements.  Quick and filled with vegetables.  I have been severely lacking in the veggie department lately.  So a salad was more than necessary.

The base of the salad started with a bag of mixed greens, a chopped celery stalk, carrot and green bell pepper.

To add some volume and staying power, I cooked up a side of Chicken Rice-A-Roni to put on top of the salad. Also added is some cheddar cheese, mozzarella cheese and some raspberry vinaigrette.

It was actually a killer salad.  The rice adds a little warmth to the salad, which adds a whole new level.  As well as the texture that the rice brings as well.  Mike loved it too in the end.  I say in the end because at first he looked at me and said ‘I think I’m going to put my rice in a little cup on the side’.  Which he really meant, ‘What the heck are you doing putting rice on our salads?’.  He was a trooper and decided to try the combo, and here we are now, with a positive report.  Muahaha.  I’m good. :)

On the side, a thick slice of the dense beer bread from Sunday night.  Still amazing.

Not sure what dessert holds tonight.  Right now I am too cold to think about the delicious peppermint ice cream.  We leave our heat off during the day, to save some $$, and when we got home, it was 60 degrees in our apartment.  Brrrr!  I am typing away in layers right now, waiting for the heat to do its magic.

Maybe I’ll have some hot cocoa and make a cookie from some Tollhouse cookie dough we have.  Sounds perfecto!

  • have fun searching for new music! I love adding warm rice or pasta to a cold salad too! making one cookie from the cookie dough you have is also a brilliant idea!

  • Once again we are seriously seperated at birth haha, I bought cookie dough at the store tonight and I kid you not we just finished eating some chocolate chip cookies (with a new awesome ice cream consisting of half chocolate pb and half vanilla w/ pb cups — gotta love Turkey Hill!) Love the warm on top of cold salad combo too, I haven’t tried this with rice before but definitely love it with chicken bbq like that :) Hope you have a great night and stay warm in that crazy snow storm girl! (Oh and I heard VA is a great place to move if you’re interested in the south… just sayin’ ;) )

  • I love putting warm things on top of cold salads – the temp contrast is killer! Yum, yum. Stay warm! Hot cocoa ought to help :-)
